The Tim Adams label was born out of a venture to make small oak casks and limited amounts of wine. Fergus was a neighbour who was kind enough to sell his Grenache to Tim in 1993 during a desperate shortage. Cabernet Sauvignon has long been recognised as a stellar performer in the highly favourable climes of Valley Clare. A small addition of Malbec adds to the complexity, contributing violets, mulberry and richness, bringing the finished wine forward, making Tim Adams slightly more approachable in its youth. Distinguished Langtons Classification. Aberfeldy is a unique vineyard, friable red loam over limestone nestled at the bottom of the easternmost hills of the Clare. The cropping level in the vineyard is never more than 1½ tonnes per acre, producing grapes with intense colour, flavour and tannins. The elegant yet intensely flavoured, highly limited yields of precious Shiraz grapes form the backbone of Aberfeldy.

Excellent Langtons Classification. When the Birks of Wendouree settled Valley Clare in 1904, they planted their site to Shiraz. Many of these old vines remain productive and offer the backbone of fruit for the icon Tim Adams Aberfeldy. Younger rootings of the same clone yield grapes of the most intense colour, depth of flavour and refined tannins. The intense perfume and muscular nature of the finished wine reflects the character of site as much as the charm and personality of the animated and affable winemaker.

It was the great Cabernet wines of Bordeaux which inspired Bill Taylor to diversify from imports and retail into the highly fraught pursuit of grape growing. An ardent enthusiast of Chateau Mouton Rothschild, Taylor had a keen enough palate and nose to determine that the most auspicious lands for Cabernet Sauvignon were amongst the idyllic rolling pastorals of Valley Clare. Eighty Acres are the world's first ever 100% carbon neutral range of wines, based upon an ISO 14044 compliant Life Cycle Assessment which accurately measures carbon dioxide emissions at every step in the product lifestyle. Some Young Punks believe that awesome wine is a powerful aid to creativity. The truth is that the wines so far have almost made themselves. The best fruit always does. But even the best fruit won't jump into a crusher by itself, so Punks help out a little in that respect. This beautiful tradeoff leaves plenty of time to talk and drink and then talk some more. She's all cherries and cedarwood, raspberries and wild game, rhubarb and forest floor, cherry stones and kirsch. Squeeze me.

The ethos is simple, to create charismatic wines that are true to what Some Young Punks think wine is about. Inspired by images as bright and as intense as the wines, Some Young Punks draw inspiration from low brow literature of the pulp fiction era. Each wine, each vintage and each label is a moment that will never come again, a winemaker should only ever promise to be consistently good, not just consistent. A profound construct of noble red varietals, Cabernet Sauvignon and Franc drive the palate, tempered by the forward drinking Malbec and plum juicyness of Merlot. The story dates back to a deluge upon the Sevenhill vineyards in 1974. Winemaker emeritus Brother John May was not convinced that the crop was up to standard, so he blended all the grapes together. Impresario Doug Crittenden declared that it was the closest thing to Pomerol he had ever tasted! Named for the founder of the Jesuit Order, St Ignatius remains to this day a wine of immense stature.

Sevenhill conjures up visions of Clare Valley idyll, serene pastoral vistas and ancient cellars full of patiently maturing Shiraz wines. One of our nation's great viticultural endowments, Sevenhill were the first ever cellars to be established in Valley Clare. Winemaking is still carried out under the direction of the Jesuitical Manresa Society, sacramental altar wine still accounts for a third of the estate's production. The old vine D3v14 clone planted on two blocks at Sevenhill is not known for great concentration, yet Sevenhill produces Merlot wines of greater colour, palate structure and character than most. While it's not quite the complete limerick, there once was a man named Reilly, who cobbled and made wine on the sly. Mr Reilly's descendants still own and operate the grounds, initially treading grapes and bottling small amounts for family and friends. The quality of the family Ardill's limited editions created its own demand and Reilly Wines were born. Two years French oak, a powerful Shiraz of immense concentration and dizzying levels of alcohol.
